3 tablespoons extra-virgin olive oil
2 medium sweet potatoes, peeled and cut into ½-inch slices
½ teaspoon salt, optional
1. Preheat the oven to 425˚F.
2. Oil a baking pan using 1 tablespoon of the olive oil, place the sliced potatoes on the sheet, and drizzle 1 tablespoon of the oil on top. Toss the potatoes to coat.
3. Sprinkle the potatoes with salt (if using), cover them with aluminum foil, and bake them for 30 to 40 minutes, until soft.
4. Transfer the baked potatoes to a bowl and mash them; mix in the remaining 1 tablespoon of oil with a fork.
